Essential at a Portuguese celebration, combining soft bread, spices and a touch of sweetness, rabanadas transport us to happy, cosy memories. Pair with a glass of Taylor Fladgate 20 Year Old Tawny.

Ingredients:

500 ml milk
100 gr White sugar
2 cinnamon sticks
Lemon peel
Slices of sourdough bread
qb Beaten eggs
Oil for frying
qb Sugar and cinnamon mixture

PREPARATION METHOD:

  • Start by heating the milk with the sugar, cinnamon sticks and lemon zest.
  • Heat over a medium heat (without boiling) until the sugar is well dissolved and the milk takes on the flavour of the cinnamon.
  • Heat a frying pan with oil to fry the French toast. The height of the oil should be a little more than half the height of the French toast.
  • Prepare 3 shallow dishes: the first with the warm, sweet milk, the second with the beaten eggs and the third with a mixture of sugar and cinnamon.
  • Also prepare a plate to drain the toast after frying.
  • One by one, dip the toast in the milk and then in the egg.
  • Fry on both sides, drain and coat in the sugar and cinnamon mixture.
  • Decorate to taste and serve.
