Silky Spring
Ingredients:
1 1/3 oz. Taylor Fladgate Chip Dry
1/2 oz. Saint Germain Liquor (elderflower liqueur)
3/4 oz. Homemade Flower Oxymel
1 1/3 oz. Homemade Pollen Soda
Homemade Flower Oxymel (recipe for 45 cocktails)
1kg Honey
6 3/4 oz. Cider vinegar
3 1/3 oz. Water
50g Ginger
15g Juniper berries
50g Jasmin flowers
Homemade Pollen Soda (recipe for 25 cocktails)
34 oz. Water
9g Pollen
5g Citric Acid
1 siphon soda load
Garnish
Dry chamomile flower
Dry purple prepetual flower
Dried pepper mint leaves
Honey
PREPARATION METHOD:
Recipe: Pour the Taylor Fladgate Chip Dry Port, Saint Germain liquor and the flower oxymel into the glass fill of ice. Stir for 5 seconds. Add the pollen soda carefully. Stir slightly.
Garnish: with a brush make a line of honey on the side of the glass. Put the flower mixture on the honey.
Glass: Highball
Homemade Flower Oxymel Recipe:
Cut the ginger into small pieces and crush the juniper. Place all ingredients in a large container. Leave to infuse for 2 weeks in cold. Stir every day. After, straining all the preparation and store in the cold. Store cold up to 2 month.
Homemade Pollen Soda Recipe: For this recipe you will need a soda siphon.
In a blender put the water and pollen. Mix for about 5 minutes. Strain with a strainner. Add citric acid and stir. Place inside the soda siphon and close tightly. Eject the soda charge. Store in the cold up to 1 week.
